This is just a delicious, light, tasty salad. What a way to have your apple!

You need
  • 1 apple
  • 2 tsp sugar free grain mustard (not a sharp one)
  • 1 tsp freshly grated lemon zest
  • water
  • juice of 1 lemon
  • ¾ or 1 cup of alfalfa
  • a few drops of stevia, to taste
To do
  1. cut up your apple (or go cute like I did), and place the pieces in a small bowl of water with the lemon juice
  2. mix the mustard with the zest, and dilute with max. 2 tbsp of water
  3. mix ¾ of the dressing with the apple
  4. place the alfalfa in a bowl and make a dent for the apple to go in - or you can just brutally mix it
  5. pour the rest of the dressing over the alfalfa
  6. and eat!

  • 5 lettuce leafs, torn in pieces
  • 1 small apple, chopped
  • 5cm of cucumber, sliced in fingers
  • a small onion, thinly sliced or chopped
  • 4 semi dried tomatoes, sliced or chopped
  • a few olives, sliced
  • a dash of olive oil
  • juice of half a lime
  • fresh dill
To do
  1. toss the whole lot together and munch away 🙂

You need
  • For the crêpes (this will make about 4-6) you need:
  • 1.5 cups of cashews, soaked
  • 3 tbsp of agave nectar
  • 2 tbsp of lemon juice
  • a pinch of salt
  • water to dilute as much as needed
  • For the filling, per wrap (as an example, the possibilities are endless):
  • slices of banana
  • slices of apple
  • tiny wedges of kumquat
  • 3 leafs of mint, chopped up
  • 1 tsp of lavender flowers
To do
  1. blend all the ingredients for the crêpes, but only add water when needed. It needs to be thin enough to spread out, that's all
  2. spread out the mixture on a dehydrator sheet (I had enough for a bit more on a 2nd sheet)
  3. dehydrate for 8 hours on 45C. The crêpe should peel off easily, not stick anymore and be pliable, so dehydrate an hour longer if needed
  4. then cut in 4 pieces, arrange your filling and carefully roll up

OK, I loooove wraps. They make a great meal whatever the time of the day!

The parts:
◊    a wrap
◊    some rocket (arugula)
◊    thinly sliced red cabbage
◊    sliced apple
◊    pine nuts (toasted or not)
◊    baba ghanoush
◊    chives
◊    salt & pepper
◊    olive oil, optional

 

Way to go:
– cut up cabbage
– put some baba ghanoush on your wrap
– arrange the veggies and pine nuts on top
– drizzle with olive oil, if you want, sprinkle with salt & pepper
– fold, and eat!

You need
  • about ¾ cup of puffed Amaranth
  • 1 apple
  • a small hand of coconut flakes (or desiccated coconut)
  • juice and zest of ½ lime
  • 1 heaped teaspoon of Tahini (I used black Tahini in this case)
  • ½ cup of non dairy milk
To do
  1. add amaranth to bowl
  2. grate apple and place in the middle, pour the lime juice over the apple
  3. sprinkle coconut over the top
  4. drop the Tahini on top, dress with lime zest
  5. pour milk over amaranth
Notes
You could toast the coconut flakes!

A light but yet filling breakfast or dessert, and you can make it fancy with more fruits or nuts, or just keep it basic 🙂

You need
  • ⅛ cup Chia Seeds
  • ½ cup light coconut milk
  • 2 tbsp Xylitol (or you can use any natural sweetener you like)
  • 1 tbsp raw cacao powder
  • 1 tsp Maca (optional, it’s just very good for you)
  • some soaked raisins (soaking is optional)
  • sliced or chopped apple, as much as you like
  • for decoration: coconut & goji berries
To do
  1. soak the seeds in the coconut milk with the cacao powder, Maca and sweetener (I soaked them overnight for breakfast, but a few hours should be fine)
  2. rinse and soak the raisins in warm water for half an hour
  3. when ready to eat, mix in apple and raisins (or use for topping) and sprinkle the goji berries and a bit of coconut on top
  4. Too easy and very healthy!
