Cucumber, Pear & Capsicum Salad w Walnuts & Tarragon
A quick and easy salad, nice for warm days. If you can't get fresh tarragon, replace with dried tarragon. As always, I have Cashew Cream on standby in the fridge, for all sorts of dressings and sauces. Ingredients are enough for 1 main meal or 2 sides.

You need
  • 120gr cucumber
  • 85gr pear
  • 35gr red capsicum
  • 1 tbsp chopped fresh tarragon
  • about 3 tsbp chopped walnuts (soaked or activated would be great)
  • for the dressing:
  • ¼ cup Cashew Cream
  • zest of 1 small lime
  • 2 tbsp lime juice
  • 1 tsp coconut nectar (or agave or maple)
  • a good grind of pepper
  • salt to taste
To do
  1. cut the cucumber, pear and capsicum in small pieces and mix them together with the tarragon and walnuts
  2. make the dressing by simply mixing all ingredients together, and add salt to taste
  3. mix the whole lot, or you can top with the capsicum and walnuts and a bit of tarragon 🙂

You need
  • 14 strawberries
  • 1 cup frozen blackberries
  • ½ cup frozen blueberries
  • 1 small cucumber, chopped
  • 1 tsp Maca
  • 1 tsp Mesquite
  • 1 glass of coconut water
To do
  1. throw all ingredients in your blender and blend for a minute
  2. drink while it's ice cold.

You need
  • 5 lettuce leafs, torn in pieces
  • 1 small apple, chopped
  • 5cm of cucumber, sliced in fingers
  • a small onion, thinly sliced or chopped
  • 4 semi dried tomatoes, sliced or chopped
  • a few olives, sliced
  • a dash of olive oil
  • juice of half a lime
  • fresh dill
To do
  1. toss the whole lot together and munch away 🙂

Raw Green Veggies Soup w Semi Dried Tomatoes

Just veggies and all raw 🙂

You need:

2 hands of fresh coriander
1 large spring onion
2 hands of spinach leaves
120gr fennel
1 hand of snow pea sprouts
1/3 cup coconut milk
120gr cucumber
1.5 tsp minced garlic
2 tbsp Bragg liquid aminos
2 tsp mild curry powder
semi dried tomatoes, chopped and rehydrated a little, as much as you like

To do:

– rehydrate the tomatoes if you like
– add everything except for the tomatoes to your blender and blend till smooth
– if you like it slightly warmed, either run for longer in your blender or place in dehydrator at 46C for 2 hours
– serve and top with tomatoes and some sprouts

Potato, Cucumber & Sausage Salad

A lovely meal I decided to make when I didn’t have the energy to cook… funny that I ended up cooking 😉 But, it is a simple meal that doesn’t require a lot of work or thinking.

You need (for 1 portion):

♣     2 medium potatoes
♣     1 favorite vegan sausage
♣     about 3 centimeters of cucumber (or less potato and more cucumber, why not)
♣     a couple of olives
♣     fresh dill, a few sprigs
♣     1/4 small-medium onion
♣     toasted sesame oil to cook in
♣     a dash of olive oil
♣     a dash of truffle oil (or if you use the concentrated oil, less)
♣     salt & pepper to taste

You do:

– cube the potatoes and boil them with salt
– slice the sausage any way you like and fry the pieces in the sesame oil
– when potato cubes are done, drain and let cool down a bit (unless you want a warm salad)
– cut up onion and cucumber, chop the dill and olives
– sprinkle a little of olive oil on the potatoes, same for the truffle oil, toss to coat (taste and add more truffle oil if you like)
– then add everything to the potato, mix and serve. Or arrange sausage on the side 🙂

Cucumber Canapé’s w Dill & Asafoetida Dip

These are lovely, tasteful canapés. Bit different, as asafoetida is not very common, or at least not used too often in the western kitchen.

♦   3/4 cup Cashew Cream
♦   2 tsp dried dill
♦   1.5 tsp asafoetida
♦   2 small cloves of garlic, minced
♦   salt to taste
♦   Spring onion, finely sliced
♦   Sweet paprika powder (do not omit!)
♦   Cucumber slices

You do (for the dip):
– mix everything but the salt (and the cucumber, of course)
– add salt to taste

Top cucumber slices with dip, spring onion and sweet paprika powder.

If you want this as a dressing, then dilute with a non dairy milk.

Raw Cucumber & Avocado Soup w Capers
This is a lovely, delicate soup, served cold. Although made with avocado, it is not heavy at all.
Prepared by:

Recipe type: soup
You need
  • ½ tall cucumber, chopped
  • 1 avocado, peeled and roughly chopped
  • 1 cup of coconut water
  • 1 heaped tsp of fennel seed
  • 1 pinch of mild chilli powder
  • juice & zest of ½ lime
  • juice & zest of ½ lemon
  • 10 fresh basil leafs
  • pepper
  • pinch of salt
  • 1 tsp of capers (or more, but it shouldn't become a caper soup 🙂 )
  • optional: ½ tbsp of Smoky Toasted Coconut Flakes, or plain toasted coconut flakes.
To do
  1. put everything except for the last two items in the blender, and whizz until it is a nice fluffy soup
  2. taste and tweak
  3. cool in fridge
  4. when you serve, top with capers, an extra basil leaf and coconut flakes.
Notes
If you want to make toasted coconut flakes: just toss some flakes in a dry hot pan and stir, they will toast pretty quickly. Once off the heat they will continue to crisp.
