Crispy Lemon Lime Chia Cookies
If you have a dehydrator, I don't really know of an easier recipe to make cookies than this one. I love lemon and lime in this recipe, but you could use other flavours too; maybe your favorite natural cordial instead of the citrus juice? 🙂 Also, these cookies are gluten free, sugar free, oil free, pretty much everything free, but still not made of dust 🙂

You need
  • ½ cup chia seeds
  • juice of 1 lemon
  • juice of 1 lime
  • zest of ½ lemon
  • zest of ½ lime
  • 2 pipettes (1/2 tsp) of liquid Vanilla Stevia (or plain Stevia)
  • top up water
  • optional: anything for decoration (I used pumpkin seeds, but red berries, like Goji berries, would look great!)
To do
  1. pour lemon and lime juice in a measuring cup. Top up with water to half a cup
  2. in a bowl, mix the juice/water with the zest, Stevia and seeds
  3. let sit for 20-30 minutes
  4. place about ½ to ¾ a table spoon of the mixture on your dehydrator sheet, that should make around 20 cookies (of course you can make them bigger or smaller)
  5. dehydrate till dry and crisp, about 4 hours (flip them over half way)

Kaffir & Ginger Carrot Soup w Curry Cashew Cream & Lime
A very easy and quick soup to make, but easy doesn't mean it isn't full of lovely flavours. The ginger gives it a nice bite without being overpowering and lime always lifts any dish 🙂 Serves 4.

You need
  • 1.7ltrs water (a part will evaporate)
  • ~ 460gr carrot
  • 4 tbsp veggie stock powder
  • 30gr fresh ginger
  • 6 kaffir lime leafs
  • 5 cloves of garlic
  • half a small onion, finely diced
for the curry cashew cream:
  • 6 tbsp Cashew Cream
  • 1 tsp curry powder (hot or mild, as you like)
  • 2 tsp lime zest
  • salt to taste
  • - more zest for decoration
To do
  1. chop the carrot, garlic and ginger and add to water with stock powder
  2. add kaffir lime leaves
  3. when carrots are soft enough to be blended, take out kaffir lime leaves and blend the soup (I used a stick blender), put leaves back if you're not serving the soup straight away
  4. mix the cashew cream with the curry powder, zest and salt to taste
  5. serve soup, add cashew cream, some chopped onion and some extra zest - leave a lime leaf in for good looks 🙂

You need
  • 2 avocados
  • zest and juice of 1 small lime
  • ¼ tsp Himalayan rock salt
  • 3-3.5 tbsp pine nuts, toasted
  • ½ small onion, chopped
To do
  1. mash the flesh of the avocados together with the zest and juice of the lime (for extra smoothness and fluffiness, quickly blend mixture)
  2. toast the pine nuts (don't let them burn like I always do)
  3. scoop avocado in a bowl and top with nuts and onion
  4. done!
Notes
Serve with any biscuit, or cut up some wholemeal wraps and bake in oven till crisp 🙂

  • 5cm of cucumber, sliced in fingers
  • a small onion, thinly sliced or chopped
  • 4 semi dried tomatoes, sliced or chopped
  • a few olives, sliced
  • a dash of olive oil
  • juice of half a lime
  • fresh dill
To do
  1. toss the whole lot together and munch away 🙂

This cream is great as dressing, dip and addition to soups.

Ingredients:

♦    1/2 cup of Cashew Cream
♦   Juice of half a lime
♦   Zest of half a lime
♦   pepper
♦   a small pinch of Himalayan rock salt

Stir all ingredients together, add salt to taste.
