Baked Banana, Grape & Peanut Stuffed Pita
OK, here's for a quick warm breakfast, made in about 6 minutes. I used 1 large pita bread for 2, but if you're hungry, just have it all yourself! 🙂 So here goes:

You need
  • 1 large banana
  • 5 large grapes
  • 3 tbsp peanuts
  • 12 medium size mint leaves
  • 1 large (or 2 small) pita bread
  • ½ tbsp coconut oil
To do
  1. heat the oil in a (medium sized) skillet
  2. add peanuts, bake for a minute, stir halfway
  3. when peanuts have started to brown, add slices of banana, making sure they all lie flat
  4. (in the meantime, now heat your pita bread in your toaster, low heat, you want to keep it soft)
  5. toss in grapes
  6. turn over the banana slices, stir through peanuts and grapes
  7. when banana slices are done, cut the pita bread in halves (or slice of the top, if you have small pita bread)
  8. switch of heat, mix in mint leaves, and scoop filling into pita bread
  9. enjoy!

You need
  • For the crêpes (this will make about 4-6) you need:
  • 1.5 cups of cashews, soaked
  • 3 tbsp of agave nectar
  • 2 tbsp of lemon juice
  • a pinch of salt
  • water to dilute as much as needed
  • For the filling, per wrap (as an example, the possibilities are endless):
  • slices of banana
  • slices of apple
  • tiny wedges of kumquat
  • 3 leafs of mint, chopped up
  • 1 tsp of lavender flowers
To do
  1. blend all the ingredients for the crêpes, but only add water when needed. It needs to be thin enough to spread out, that's all
  2. spread out the mixture on a dehydrator sheet (I had enough for a bit more on a 2nd sheet)
  3. dehydrate for 8 hours on 45C. The crêpe should peel off easily, not stick anymore and be pliable, so dehydrate an hour longer if needed
  4. then cut in 4 pieces, arrange your filling and carefully roll up

  • 1 orange, peeled
  • 2 dates
  • 1 tsp of Maca
  • 1 tsp of Mesquite
  • 250ml coconut water
To do
  1. Blend the whole lot and drink or keep in a jar and take places 🙂

A nice way of serving fruits and have a filling breakfast (or lunch, or snack ) 🙂

You need (for 2-3 persons):
♣     1 banana, cubed
♣     1 nectarine, cubed
♣     half a hand of almonds
♣     half a hand of hazelnuts
♣     half a hand of walnuts
♣     oil for baking (I like to use coconut oil)
♣     1 wholemeal pita per person (so 2 or 3)
♣     1 tsp cinnamon

You do:
– lightly toast the pita bread, to make it puff a little
– heat the oil in a skillet
– add nuts, bake and stir for a few minutes
– add cubed banana, nectarine and cinnamon, bake for a short while, switch off heat before it goes too soggy
– cut off the top of the pita bread so you have a nice pocket
– stuff the pita with the baked goodies and serve.

You could drizzle some orangey Cashew Cream on top (just mix orange zest and a little bit of agave or coconut nectar with Cashew Cream), or serve on the side 🙂

The ginger gives this breakfast a bit of a bite, the banana gives it creaminess and the persimmon freshness, it is lovely 🙂

Grocery list:

♥     1 banana
♥     1/2 persimmon, wedged
♥     1.5 tbsp pumpkin seeds
♥     1 tsp sesame seeds
♥     1 tsp fresh grated ginger
♥     a decent sprinkle of cinnamon
♥     3/4 cup of rice puffs
♥     small sprinkle of Himalayan rock salt – optional
♥     a little oil
♥    optional: a dash of non dairy milk

Process:
– cut the banana in pieces and quickly bake them in a little oil with the pumpkin seeds, sesame seeds, cinnamon and optional salt
– arrange in a bowl with the rice puffs and persimmon and top with grated ginger, add non dairy milk if preferred, and more cinnamon to taste 🙂

Parts (per person):
◊    1 wrap (see recipes in Wraps & Sandwiches or use wholemeal or gluten free wraps)
◊    1 small banana
◊    peanut butter, not sweetened/salted
◊    1/4 cup of Cashew Cream (see recipe)
◊    1 tbsp of raw Agave nectar
◊    1 teaspoon of Vanilla paste
◊    some fresh mint leaves

Assembly:
– spread the peanut butter on your wrap
– slice the banana lengthwise and cut in two
– bake the banana (coconut oil, preferably)
– mix Cashew Cream with agave nectar and Vanilla
– transfer banana to wrap
– place mint leaves on banana
– pour Vanilla cream over the top
– roll up and eat!

You need
  • 1 banana, chopped
  • 1 tbsp coconut oil
  • 1-1.5 tbsp Ketjap Manis (sweet soy sauce)
  • 1 tsp onion powder
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 small pinch of chilli powder, or more to taste
  • 1 tsp curry powder
  • ½ onion, chopped
To do
  1. heat the oil and add chopped banana and onion
  2. stir and bake for a few minutes
  3. add all the other ingredients
  4. when all is nice and soft, mash slightly using a fork, leaving small chunks.
Notes
Serve as side dish, condiment or as dip 🙂
