Creamy Watercress & Tomato Soup w Kaffir Lime Leaf
This is an amazing soup with delicate creaminess. Watercress is incredibly healthy, and its flavour pairs beautifully with tomato, basil and avocado in this recipe. Kaffir Lime leaves add a nice surprising flavour and no oil is needed as you use avocado for healthy fats and a smooth feel 🙂

You need
  • 7 large tomatoes
  • 1.75 liters water
  • 2 large cloves of garlic
  • 1 tsp celery salt (if you don't want to use salt, then you could pop a few small pieces of celery in, if you like)
  • 3 tbsp vegetable stock powder (or 3 cubes)
  • 1 bunch of watercress
  • 1 hand of fresh basil
  • ⅛ tsp chilli powder
  • 1 small avocado, rougly chopped
  • 2 kaffir lime leaves
To do
  1. quarter the tomatoes, roughly chop the garlic and place in a large pot on medium to high heat and let them simmer (stirring a few times) for about 15 minutes till it's all nice and mushy
  2. add the water, celery salt, vegetable stock powder and let come to the boil
  3. then add the watercress, basil, avocado and chilli powder
  4. take off the boil and blend with a stick blender
  5. add kaffir lime leaves and let simmer for 5 to 10 minutes, then take them out and you're done 🙂

You need
  • 3 cloves of elephant garlic, or 9-10 small cloves
  • 4 small kaffir lime leafs
  • about 3 tbsp of olive oil
  • 2 vegetable stock cubes
  • 1 liter of water
  • lots of pepper
  • salt to taste (but probably not necessary)
To do
  1. grate ¾ of the garlic, chop the remaining ¼
  2. add the oil to a pan, heat it and add the chopped garlic
  3. let the garlic brown, then add the water, stock cubes and kaffir lime leafs
  4. stir and let come to the boil and then add the grated garlic
  5. let simmer for 15 minutes, then blend the soup in your blender or with a stick blender (take the leafs out before you blend)
Notes
You can serve it straight away or put the leafs back and keep till later.
Of course you can also use this soup as a base for many other soups 🙂

This is quite an amazing soup, the flavour is just so out of this world, creamy, full of kaffir lime and with a hint of spice too 🙂 I used two kaffir lime leafs, and I wouldn't use more than that. This recipe is enough for 4 entrée size portions, or 2 mains.

You need
  • 12 mushrooms, sliced
  • 1 tbsp vegetable stock powder
  • 1 ltr water
  • 1 medium onion, chopped
  • 1 tsp minced garlic
  • 2 kaffir lime leafs, torn but not in pieces
  • 1 cup of oat milk
  • 2-3 small pinches of Chilli powder, to taste
  • a little coconut oil (I used deodorized oil)
To do
  1. fry the onion in the oil
  2. add the mushroom and a dash of water, stir and simmer for a minute or two
  3. add the stock powder and the rest of the water
  4. add kaffir lime leafs and garlic
  5. let simmer for 10 more minutes
  6. take off heat, remove kaffir leafs and blend with stick blender
  7. add oat milk, put back on stove and add kaffir lime leafs again, heat through and serve
Notes
I kept a few pieces of mushroom on the side and added back for serving, and topped with some tarragon 🙂
