Roasted Sweet Potato w Thyme, Garlic & Sesame Oil

- 1 large sweet potato
- 2-3 tbsp of toasted sesame oil
- 1 tbsp of minced garlic
- 1 tbsp of dried thyme
- 1 tsp of Himalayan rock salt
- preheat oven to 200C
- mix the oil, garlic, thyme and salt
- peel the potato, cut in cubes and place in oven dish
- pour oil mixture over potatoes and toss to coat
- place in oven and bake for about 40 minutes or until soft and browned to your liking
