Stirfried Watermelon & Fennel Salad w Avo Apple Dressing
This is a delicious half warm, half cold salad with a hint of sweetness. Stir fried watermelon tastes amazing. The teaspoon of coconut oil I would not omit, as it gives a subtle creamy flavour to the melon. You can have this as a main (one bowl per person) or make smaller portions for entrée 🙂

You need
  • about 375gr watermelon (weight with skin on)
  • about 125 gr fennel
  • a few coriander sprigs
  • ¼ avocado
  • 1 tbsp apple cordial
  • pepper & Himalayan rock salt
  • 1 tsp coconut oil
  • 1 calendula flower (optional - we have them in the garden)
To do
  1. cube watermelon, melt coconut oil, place watermelon in skillet, grind some pepper on top and add a small sprinkle of salt
  2. stir fry watermelon for about 6-7 minutes, the colours will become more orange and intense, gorgeous!
  3. slice the fennel thinly, discard bottom end, mix with the leaves of the coriander
  4. cut the avocado very finely, then mash together with the apple cordial, add a bit of pepper and a smidge of salt. Add a tbsp of water if needed to make thinner
  5. mix half of the dressing through the fennel
  6. serve next to each other or with watermelon on top, pour the rest of the dressing on the salad, and top with the optional flower (or pull the leaves off and sprinkle on top)

This recipe will give you a nice fruity punch with a slight bite. I think watermelon and ginger make an odd couple, but I do like odd couples 😉 Perfect for a warm day or just to get your fruit in!

You need
  • ~400gr watermelon (flesh only)
  • 1 peach, pitted
  • ~ 75gr blueberries
  • 6gr fresh ginger, peeled
  • ½ cup non dairy milk
  • ice cubes, optional
To do
  1. throw all ingredients (except for the ice cubes) in your blender, whizz away till all nice and blended
  2. pour in glasses and add ice cubes if you like, and top with some blueberries for looks
  3. that's all!

Balsamico, Aniseed & Cinnamon Marinated Watermelon
This we had as a refreshing snack on a warm day, together with other nibbles and a glass of wine. It still tastes like watermelon but with deeper flavours. The aniseeds give off their flavour once bitten, it's lovely 🙂

You need
  • about 700 grams of watermelon
  • 2.5 tbsp balsamico
  • 1¾ tsp cinnamon
  • a very generous grind of pepper
  • 1 tsp aniseeds
To do
  1. cube the watermelon and place in bowl
  2. mix all the other ingredients
  3. pour the marinade over the melon and coat well
  4. let sit for 1 hour or more in the fridge, stirring now and then
  5. drain before serving.

This is really, really nice. I think you can eat it any time of the day, as any course. You could also cube it and mix it through a salad, with beans and potato and much more 🙂

You need
  • slices of watermelon, about 2-2.5cm thick (1 inch)
  • salt
  • olive oil
  • pepper
  • sesame seeds
To do
  1. sprinkle the slices with salt all over, and let sit for about 20 minutes
  2. - rinse them and pat them dry thoroughly
  3. - heat a grill pan
  4. - sprinkle watermelon with black pepper
  5. - grill till black lines appear, turn over and do the same
  6. - sprinkle sesame seeds on top and serve

  • about a quarter of a small to medium watermelon
  • half a cup of hemp mylk (or any other non dairy milk)
  • fresh rosemary, very finely chopped, start with a small amount, and add if you like, as Rosemary can be quite strong. However, this drink can handle quite a bit!
  • ice cubes - optional
To do
  1. mix the whole lot in the blender
  2. serve as is or add some ice cubes
