Chickpea & Walnut Oven Baked Bites
These little balls are perfect to replace those finger food meat balls that are served at functions. One recipe makes about 40 balls, depending on their size.

You need
  • 1 can chickpeas
  • ½ cup walnuts
  • 2 tsp curry powder
  • salt
  • ¼ cup olive oil
  • ½ cup bread crumbs (gluten free, if you like)
  • 55gr (more or less) Vegusto, piquant, grated - or another spicy cheeze
  • 60gr red onion, finely chopped
  • ¼ cup non dairy milk, optional
  • about 2-3 tbsp spelt or wheat flour, depending how moist the mixture is - optional
To do
  1. preheat oven to 200C (392F)
  2. place chickpeas and walnuts in your food processor and mix
  3. add curry powder, salt, bread crumbs and run machine
  4. slowly add oil
  5. you want to end up with a mixture that is firm enough to make balls of; if too thick, add some non dairy milk, if a tad too moist, add the flour
  6. now roll the balls and place on an oven rack with baking paper
  7. bake for about 25 minutes or until the outside is crisp - then they're done!
  8. serve with any sauce you like 🙂
Notes
If you want to make them spicy, add chilli powder to the mixture.

Open Rocket & Marinated Zucchini Sandwich w Smokey Truffle Chickpea Sauce
This is a lovely light meal, and ideal when you have the marinated zucchini left over from dinner. The chickpea sauce is made in 5 minutes.

You need
  • wholemeal bread (toasted or not, up to you)
  • a cup of loosely packed rocket
  • a small cup of marinated roasted zucchini (see recipe)
For the chickpea sauce:
  • 1 cup of cooked chickpeas
  • ½ cup of oat milk (or another light textured non dairy milk)
  • ½ tbsp brown rice miso
  • 1 clove of garlic
  • ¼ tsp liquid smoke (Hickory)
  • 1¼ tsp truffle oil
To do
  1. mix all ingredients for the sauce in your blender. Of course you can heat this up and dilute further into a thinner sauce.
  2. if you want, serve zucchini hot, but cold is very nice too
  3. just arrange everything on top of each other; bread, rocket, zucchini, chickpea sauce
  4. and enjoy 🙂

Spicy Chickpea Eggplant Fritters w Orange Dip
I'd say this is comfort food, but apart from the oil the ingredients are all healthy, so I think I can get away with it now and then 😉 I didn't use a deep fryer, just a large pan with a few centimeters of oil. Serve with a salad, or have a few pieces as an entrée.

You need
  • 1 eggplant
  • 1 cup of chickpea flour
  • ½ tsp of black salt
  • ½ tsp chilli powder (or more, of course)
  • 2 tbsp nutritional yeast
  • juice of ½ lemon or lime
  • 1 tsp baking powder
  • about half a cup of water
  • half a cup of Cashew Cream
  • juice and zest of half an orange
  • pepper
To do
  1. heat your oil
  2. sieve the chickpea flour into a bowl
  3. mix in all dry ingredients
  4. stir in lemon or lime juice and then the water bit by bit until you have a nice cream like substance
  5. slice your eggplant in slices of about ¾-1cm and dredge through the batter
  6. deep fry till quite brown, so they're nice and crisp
  7. for the orange dip, just mix Cashew Cream with the pepper, orange zest and half of the juice, adding in more juice as needed for the texture you prefer.
